BBQ Knives & Pitmaster Guide

If you cook over charcoal, smoke brisket, carve large joints or regularly prepare meat outdoors, the right knife makes the job much easier. Norvic’s BBQ range is built around a few distinct jobs rather than one knife trying to do everything.

Long slicers for brisket and roasts

A long slicing knife is designed to make clean draw cuts with fewer strokes. Our Pitmaster 12-inch Slicing Knife uses German X50 stainless steel and is intended for brisket, roasts and other large cooked meats where a smooth slice matters.

For blade length, board space and slicing technique, read How to choose a brisket slicing knife.

Broad blades for heavy prep

Broader, heavier profiles are useful when you want more blade height, knuckle clearance and confidence through larger cuts of meat or vegetables. The Apache, Navajo and Felbrigg each approach that job differently.

All-purpose BBQ prep

For a more versatile outdoor knife, the Comanche is a compact all-purpose option in German X50 steel. It is suited to the mixed jobs that happen around a barbecue: trimming, slicing vegetables, portioning meat and general prep.

Choosing the right profile

  • Brisket and roast slicing: choose the long Pitmaster slicer.
  • Broad-board work and heavier prep: look at Apache, Navajo or Felbrigg.
  • General outdoor prep: look at Comanche.

These are cutting knives rather than bone saws or chopping cleavers. Avoid striking bone, frozen food or hard surfaces unless a product is specifically designed for that use.

Care after outdoor cooking

Clean and dry the blade soon after use, particularly after acidic foods, marinades or outdoor cooking where moisture can sit on the steel. Store the edge so it cannot contact other hard utensils.
