How to Choose a Brisket Slicing Knife
A brisket slicer is useful when you want long drawing cuts through a cooked joint. It has a different job from the knife you use for trimming raw meat or chopping vegetables before the cook.
Start with the size of the joint
A longer blade gives you more cutting edge for each draw. That can reduce short back-and-forth strokes when slicing a wide brisket, gammon or roast. The Norvic Pitmaster 12-inch Slicing Knife has a 12-inch blade, X50 stainless steel and an ebony wood handle.
Length is only useful if you can control it. Allow clear space around the board and choose storage that protects the full edge. A large knife should not force you to work close to the edge of a cramped counter.
Match the knife to the finished food
Use a slicer for smooth cuts through boneless cooked meat. Use an appropriate preparation knife for trimming before cooking. Keep bones, frozen food and hard chopping jobs away from the slicing edge. A long slicer is not a bone saw or a heavy cleaver.
Use the blade’s length
Set the joint on a stable board. Identify the direction of the meat’s grain, then slice across it where appropriate for the cut. Use a controlled drawing motion and let the edge do the work. Keep your supporting hand clear of the blade’s path. If the meat tears, check the edge condition and slicing direction before using more force.
Choose a board and storage together
The Wensum Acacia Cutting Board measures 40 × 30 × 2.8 cm and has juice grooves and side handles. Check those dimensions against the joints you cook; a larger roast may need a larger working area. The Carving Bundle combines the Pitmaster slicer and Wensum board. Its product page shows the current bundle price.
Plan for cleaning and edge care
Wash the knife by hand and dry it immediately, including the handle. Do not leave it to soak or put it in a dishwasher. Store it with the edge protected. Wash a wooden board by hand, dry it thoroughly and maintain it with a suitable food-safe board oil when needed.
If the edge no longer cuts cleanly, use a sharpening method suitable for the knife or ask about Norvic’s Norwich sharpening service. Our care guide explains ongoing maintenance.
For the knives used earlier in the cook, compare the BBQ and Pitmaster guide. Check the selected product’s availability before planning a gift or a particular cook.
Japanese Steel. Norfolk Soul.
We are Matt, Dean, and Leigh.
Three friends living here in Norfolk with a simple frustration: Why is the choice always between a cheap blade that blunts in a week, or a luxury knife you’re too scared to actually use?
We realised that big brands charge a fortune for the badge, while budget knives cut corners on steel and heat treatment. We knew there had to be a middle ground.
So, we built Norvic.
Our mission isn't just to sell knives. It's to put professional-grade steel into home kitchens. Whether you're slicing brisket low and slow on the BBQ or prepping a Sunday roast for the family.

The Norvic Difference: Hand-Finished in Norfolk.
Most knife brands are actually just logistics companies. They move boxes from a factory to your door.
We do things differently. We believe that a knife is only as good as its final edge. That is why every single Norvic blade is unboxed, inspected, and hand-finished in our Norfolk workshop before it reaches you.
We don't trust high-speed factory robots to do the final sharpen. They generate heat, which ruins the temper of the steel. Instead, we use a water-cooled Tormek system to grind the edge cold, preserving the hardness.
We then refine the blade using leather and 1-micron diamond emulsion, the same compound used to polish gemstones.
The result? An edge that is sharper, stronger, and longer-lasting than knives costing three times the price.
Our Norvic Sharp process includes sharpening every Norvic knife by hand. References to 1 micron describe the finishing abrasive rather than the thickness of the cutting edge.
Our Mission: Global Steel, Local Standards.
We believe in transparency. We source premium high performance steels from Japan and Germany, bringing them home to Norfolk where we add the final 10% of magic that mass production simply can't match.
We don't have a flashy showroom or a huge marketing department. It's just us, the workshop, and the steel. By cutting out the middlemen and finishing the blades ourselves, we keep prices fair without compromising on performance.
That’s why we offer a Lifetime Warranty on every knife. We know exactly how sharp they are..because we sharpened them ourselves.
