About Norvic Knives
We are Matt, Dean and Leigh — three friends living here in Norfolk.
Norvic is our independent knife business. We started from a simple frustration: there is a large gap between inexpensive kitchen knives that are often disappointing to use and specialist knives that can become expensive, complicated or intimidating to buy.
Our aim is to sit in that middle ground properly — good steels, sensible profiles, careful finishing and clear information about what each knife is for.
Whether you are slicing brisket low and slow on the BBQ or preparing a Sunday roast for the family, we want you to enjoy using the knife you choose.

Why we finish knives in Norfolk
Steel choice matters, but the edge is the part you actually cook with. Selected Norvic knives are finished in Norfolk rather than simply being taken out of a box and sent straight on. Depending on the range and blade, that can include refining the edge geometry, honing, deburring and final hand stropping.
Our current finishing process includes water-cooled sharpening equipment and fine diamond compounds, with some Norvic edges finished by hand using 1-micron diamond suspension.
Different steels for different jobs
We do not believe one steel is right for everyone. Holkham uses German X50 / 1.4116 stainless steel for toughness and straightforward maintenance. Blickling uses Japanese AUS-10 in a San Mai construction for a finer, more precise feel. Sandringham combines AUS-10 cores with 67-layer Damascus construction, while Felbrigg uses Hitachi SLD tool steel for a specialist tall-profile knife.

Built around real kitchen use
We choose and develop products around recognisable kitchen jobs: chef’s knives for general preparation, Santoku and Nakiri for push-cutting and vegetables, utility and paring knives for smaller work, long slicers for brisket and roasts, and specialist profiles for BBQ and outdoor cooking.
We would rather explain those differences clearly than tell you every knife is perfect for every job.
Sharpening and support
Knives are consumable tools at the edge. Even very good steel eventually needs maintenance. Alongside the product range, we offer a professional knife sharpening service in Norwich and stock sharpening and honing equipment for customers who prefer to maintain their own knives.
