The Holkham 7” Santoku is our uncompromising answer to the ultimate kitchen workhorse. No delicate mechanics. Just brutal efficiency and an edge finished using 1 micron abrasive.
The Workhorse Steel
A daily driver needs to take a beating. We forged the Holkham range from German X50 Premium Stainless Steel, hardened to exactly 56 HRC. This hits the perfect metallurgical sweet spot for a busy prep station: incredible toughness and heavy stain resistance. At 56 HRC, the edge won't micro-chip when you drive it through a tough winter squash or catch a bone, and it touches right back up to a blindingly sharp edge with a few passes on a strop.
Geometry & Control
A blade is useless if you can't control it. The Holkham features a heavy stainless steel bolster and signature triple-riveting to perfectly center the balance point right at your pinch grip. The flatter edge profile and dropped tip of the Santoku shape are specifically engineered for aggressive, rhythmic downward push-cuts. No sawing, no tearing. Just decisive, frictionless prep.
