If the Chef’s knife is the captain, the Nakiri is the specialist. This double-bevelled vegetable cleaver is designed for one purpose: processing high volumes of produce without fatigue. Unlike a curved European blade, the Blickling Nakiri features a flat edge profile. This allows you to chop straight down to the board, ensuring clean, complete cuts every time—no more "accordion" vegetables that are still attached at the bottom.
The Steel: 3-Layer San Mai
The blade is crafted from AUS-10, a premium high-carbon Japanese steel hardened to 60 HRC. Because vegetable prep involves repeated impact with the chopping board, edge retention is critical. This hard core is sandwiched between two layers of softer stainless steel (the "San Mai" method) for durability. The blade features a distinctive hammered finish, which isn't just aesthetic; it creates air pockets that prevent starchy vegetables like potatoes and cucumbers from sticking to the side of the knife.
The Handle: Italian Olive Wood
We’ve moved away from synthetic plastics. The handle is sculpted from natural Italian Olive Wood, chosen for its warmth and tactile grip. The lightweight nature of the wood balances the rectangular blade perfectly, making the knife feel nimble rather than heavy. Because it’s a natural material, the grain on every single knife is unique.
The Norvic Difference: Hand-Finished in Norfolk
Most brands ship knives straight from the factory box. We don't. Before this knife reaches you, it is processed in our Norfolk workshop. We regrind the edge on a water-cooled Tormek stone to a precise 15 degrees, then hone it on leather, and finally strop it with 1-micron diamond suspension. The result? A "silent" edge that falls through peppers and tomatoes without bruising them.
