Worstead vs Blickling: Which Norvic Knife Suits You?

Worstead and Blickling both use Japanese AUS-10 core steel. The main buying decisions are the blade profile, construction, handle and care routine you prefer. Neither the number of layers nor a patterned finish makes one range the right choice for every cook.

The differences that matter

  • Worstead: 67-layer Damascus construction and G10 handles, with five profiles for everyday cooking.
  • Blickling: three-layer San Mai construction, a hammered finish and natural olive wood handles, with Chef’s, Nakiri and Utility profiles.

The AUS-10 core forms the cutting edge in both ranges. The outer construction and finish give each range its appearance. Choose the shape for the food you prepare rather than treating the layer count as a performance score.

Choose Worstead for these jobs

The 8-inch Chef Knife is the general preparation option. The 5-inch Santoku has a shorter, broad profile for compact board work. Choose the 5-inch Utility for smaller ingredients and trimming, or the 3.5-inch Paring Knife for peeling and detailed preparation. The 8-inch Bread Knife adds a serrated option for loaves and bagels.

Choose Blickling for these jobs

The Chef’s Knife covers general chopping and slicing. The flatter profile of the Nakiri suits controlled vegetable preparation. The Utility Knife handles smaller ingredients and fine trimming. Natural olive wood gives each handle its own grain and appearance.

Handle and care preferences

G10 is a practical synthetic handle material. Olive wood offers natural texture and variation. Both ranges should be washed by hand and dried promptly. Do not soak the knives or use a dishwasher. Protect the edge during storage, and avoid bones, frozen food and hard cutting surfaces.

If you prefer natural wood and mainly want Chef’s, Nakiri and Utility profiles, start with Blickling. If you want a Damascus appearance with G10 handles, or need a matching bread or paring knife, start with Worstead. If possible, handle a knife before buying: comfort and control are personal.

Build a useful set gradually

Choose one main knife first, then fill a specific gap. A small paring knife can complement a chef’s knife; a bread knife solves a different problem from a straight-edged utility blade. Check the individual product pages for current prices, availability, dimensions and included accessories.

Japanese Steel. Norfolk Soul.

We are Matt, Dean, and Leigh.

Three friends living here in Norfolk with a simple frustration: Why is the choice always between a cheap blade that blunts in a week, or a luxury knife you’re too scared to actually use?

We realised that big brands charge a fortune for the badge, while budget knives cut corners on steel and heat treatment. We knew there had to be a middle ground.

So, we built Norvic.

Our mission isn't just to sell knives. It's to put professional-grade steel into home kitchens. Whether you're slicing brisket low and slow on the BBQ or prepping a Sunday roast for the family.

The Norvic Difference: Hand-Finished in Norfolk.

Most knife brands are actually just logistics companies. They move boxes from a factory to your door.

We do things differently. We believe that a knife is only as good as its final edge. That is why every single Norvic blade is unboxed, inspected, and hand-finished in our Norfolk workshop before it reaches you.

We don't trust high-speed factory robots to do the final sharpen. They generate heat, which ruins the temper of the steel. Instead, we use a water-cooled Tormek system to grind the edge cold, preserving the hardness.

We then refine the blade using leather and 1-micron diamond emulsion, the same compound used to polish gemstones.

The result? An edge that is sharper, stronger, and longer-lasting than knives costing three times the price.

Our Norvic Sharp process includes sharpening every Norvic knife by hand. References to 1 micron describe the finishing abrasive rather than the thickness of the cutting edge.

Products

Our Mission: Global Steel, Local Standards.

We believe in transparency. We source premium high performance steels from Japan and Germany, bringing them home to Norfolk where we add the final 10% of magic that mass production simply can't match.

We don't have a flashy showroom or a huge marketing department. It's just us, the workshop, and the steel. By cutting out the middlemen and finishing the blades ourselves, we keep prices fair without compromising on performance.

That’s why we offer a Lifetime Warranty on every knife. We know exactly how sharp they are..because we sharpened them ourselves.
