The Steel: German X50CrMoV15
For a serrated knife, edge retention is vital because sharpening them at home is difficult. We use German X50 stainless steel (56 HRC) for its durability. The teeth on this blade are tough enough to bite through the hardest sourdough crusts day after day without rolling or dulling. The stainless nature of the steel means it resists corrosion from acidic foods like citrus and tomatoes.
The Serrations: Scalloped & Sharp
Unlike cheaper "saw" knives that rip the food, the Holkham features sharp, scalloped serrations. These teeth pierce the hard outer crust instantly, allowing the blade to glide through the soft crumb underneath without compressing it. This results in fewer crumbs on the board and perfect, fluffy slices every time.
The Handle: Pakka Wood & Triple Rivets
You need a secure grip when sawing through a tough loaf. The handle uses Pakka Wood, an engineered material that is heat and moisture resistant. The classic Western profile features a full bolster and triple riveting, providing the stability and weight needed to let the knife do the work, so you don't have to force the cut.

Most mass-produced bread knives arrive with a rough, "toothy" wire edge that creates excessive crumbs. We refine this. Before shipping, every Holkham knife is processed in our Norfolk workshop. We deburr and polish the flat side of the blade on our leather honing wheels and finish with a 1-micron diamond strop. This ensures the serrations cut cleanly and smoothly, rather than tearing their way through your food.
