The Utility knife (or "Petty") is the unsung hero of the kitchen. It bridges the gap between the power of a Chef’s knife and the detail of a Paring knife. It is nimble enough for trimming silver skin from meat, yet long enough to slice citrus fruit, cheese, or tomatoes without crushing them.
The Steel: 3-Layer San Mai Just like its bigger brother, this blade uses a core of Japanese AUS-10 High Carbon Steel (60 HRC). This hard core is clad in two layers of softer stainless steel, giving you razor-sharp performance with added resilience. The hammered finish isn’t just for looks though, it helps prevent slices of cucumber or potato from sticking to the blade.
The Handle: Italian Olive Wood Balanced for "in-hand" work or board work. The natural Olive Wood handle feels warm to the touch and offers a secure grip, whether you are peeling over the sink or chopping on the board.
The Norvic Difference: Hand-Finished in Norfolk A utility knife needs to be laser-sharp to cut soft skins (like tomatoes) without squashing them. That is why we finish this blade in-house. We refine the factory edge on our water-cooled Tormek system, hone it, and polish it with 1-micron diamond suspension. This creates an edge that "bites" instantly with no sawing required.

replacement under our warranty, Norvic Knives will provide a replacement of the
