



Norvic Blickling Chefs Knife
Japanese San Mai Steel. Italian Olive Wood. Finished in Norfolk.
The Chef’s knife is the captain of the kitchen. It needs to be robust enough for root vegetables, yet agile enough for shallots. The Blickling is designed to be the knife you reach for 90% of the time.
The Steel: 3-Layer San Mai At its core is AUS-10, a premium high-carbon Japanese steel hardened to 60 HRC. This offers the edge retention of a pro blade but with added durability. This hard core is sandwiched between two layers of softer stainless steel (the "San Mai" method). This protects the brittle core and gives the blade its signature strength. The surface is finished with a traditional hammered texture, which creates air pockets to stop food from sticking to the blade.
The Handle: Italian Olive Wood We’ve moved away from synthetic plastics. The handle is sculpted from natural Olive Wood, chosen for its warmth and grip. Because it’s a natural material, the grain on every single knife is unique.
The Norvic Difference: Hand-Finished in Norfolk Most brands ship knives straight from the factory box. We don't. Before this knife reaches you, it is processed in our Norfolk workshop. We regrind the edge on a water-cooled Tormek stone to a precise 15 degrees, then hone it on leather, and finally strop it with 1-micron diamond suspension. The result? A "silent" edge that glides through prep work without dragging or tearing.

replacement under our warranty, Norvic Knives will provide a replacement of the
same item whenever possible. If the specific item is no longer available or out
