Uncompromising Japanese Steel
The core of the Cheyenne is forged from certified Hitachi SLD Japanese tool steel. Originally designed as an industrial die steel, it is incredibly tough and holds a wicked edge. Clad in a 3-layer construction, you can trace the exact point where the core steel meets the outer layers through the meandering wave pattern visible along the highly polished lower bevel. Hardened to 58-60 HRC, it delivers unmatched retention when slicing brisket or tackling massive piles of BBQ prep.
The Tsuchime Advantage
The upper half of the blade features a traditional Japanese Tsuchime (hammered) finish. This isn't just for show, the hammered dimples create microscopic air pockets that prevent dense, wet ingredients from suctioning to the side of the wide blade, allowing for rapid, frictionless slicing.
The Ultimate Station Knife
The towering height of the blade gives your knuckles massive clearance on the chopping board for rhythmic, uninterrupted prep.
