Norvic Holkham 8" Chefs Knife
German X50 Steel. Durable Pakka Wood. Finished in Norfolk.
The Holkham 8-inch Chef's knife is the definition of a kitchen workhorse. Designed for the reality of a busy home or professional environment, it is robust, forgiving, and built to handle heavy prep lists. Whether you are rocking through herbs, slicing meat, or breaking down a chicken, the Holkham offers the perfect balance of professional performance and everyday durability.
The Steel: German X50CrMoV15
We chose the industry-standard German X50 stainless steel for its legendary toughness. Hardened to 56 HRC, this steel is designed to withstand knocks, twisting, and heavy chopping without chipping. It is the ideal choice for a "do-it-all" blade that requires minimal maintenance. It is highly stain-resistant and, while it retains a sharp edge, it is also incredibly easy to bring back to razor sharpness with a standard steel rod.
The Handle: Pakka Wood & Triple Rivets
The handle combines the warmth of wood with the durability of a composite. Pakka Wood is an engineered material that is heat and moisture resistant—it won't warp, crack, or absorb bacteria. The classic Western profile features a full bolster for balance and triple riveting for unbreakable strength. It feels substantial and secure in the hand, perfect for prolonged use.
The Norvic Difference: Hand-Finished in Norfolk
A knife is only as good as its edge. Most mass-produced knives arrive with a factory grind that is merely "adequate." We take it further. Before shipping, every Holkham knife is processed in our Norfolk workshop. We regrind the edge on a water-cooled Tormek stone to a precise 15 degrees, then hone it on leather, and finally strop it with 1-micron diamond suspension. We take a robust German workhorse and give it the precision (and sharpness) of a high-performance tool.
Specifications:

Care Note: While X50 steel is highly rust-resistant, we still recommend hand washing to preserve the handle and the hand-polished edge. Avoid the dishwasher to keep it sharper for longer.
